Maria Manuela Estevez Pintado is Assistant Professor of the College of Biotechnology of the Portuguese Catholic University. Her research interests include Biotechnology and Biochemistry, and she carries out research in a range of key technologies for the production, characterization, and preservation of industrially/traditionally processed products. During her scientific career, she has published over 100 papers in refereed international journals and has coordinated or co-coordinated 46 externally funded research and development projects.

Professor Lateef Oladimiji Sanni is a food technologist in the Department of Food Science and Technology at the Federal University of Agriculture, Abeokuta, Nigera. He has over 20 years experience in research and consultancy, and his expertise lie in postharvest aspects of agricultural commodities, with a special interest in tropical root crops. As the author of over 90 international peer-reviewed papers and other publications, he is a Visiting Professor at the University of Greenwich, UK, and Vice President of both the Nigerian Institute of Food Science and Technology, and the International Society of Tropical Root Crops.

She has gained fellowships in research from Moscow, France and Japan and is a board member of the Asian Federation of Biotechnology, Vietnam Association of Cereal and Foods.

Anton S.M. Sonnenberg is a Research Group leader at the Department of Plant Breeding, Wageningen University and Research Centre in The Netherlands. His expertise lies in genetic and breeding of edible fungi, substrate utilization of Agaricus bisporus, nutritional values and bioactive compounds of edible fungi and fungal viruses. He was Scientific Researcher and then Head of Department, Strains and Breeding at the Mushroom Experimental Station, Horst from 1988-1992, 1992-2001.
